Starting with encoding. How to learn?

I'm starting with encoding programs and I'd like to know more about using better the MediaCoder and understanding what each thing does, like the Picture, Video etc. I know a little, but i don't know all the possible, how to change the options to getter better results etc.
Can anyone indicate any manual or tutorial?
