Mkv file help

I need some help with the audio and subtitle options with some mkv files. I tried to switch the audio channel from 0 to 1 (jap to eng) and it still plays only the jap audio. Plus, the subtitles are coming up and I don't know how to get rid of them or how to option them out. I would like to make a dual language vid file so can someone give me some tips. Thanks.
