Transcode useing second/alternate soundtrack.

Hi everyone,
I have an Italian(1) and English(2) .mkv encode which I need to transcode to .avi. I have no problems with my current settings, but have no idea how to "tell" MediaCode to transcode this file and use the English only soundtrack.
Can anyone assist here?
