Simply, the subtitle size can be changed based on your chosen resolutions by default diagonal scale. In additions, you can change the size by applying the scales provided as as shown in the tab subtitle:

As far as I know when you bought an iPhone you also get OEM disc (CD or DVD) including drivers, programs, guides. Check the disc, there must be specialized converting program for iPhone video files.

I don't own any iPhone, so I can't do any experiment to confirm your conclusion.
More importantly, you can build your own "ISO" for your iPhone by analyzing one of the sample files from Apple, the file format, video and audio codecs with suitable bitrates.

The links all work well by using built-in download manager of the browsers, but not work with third-party download manager program. I got the same problem before.
