Thanks for your answer but I think you're wrong. I tried it with an english subbed movie, too. Without umlauts or special characters... Exact the same behavior like before. I guess the character encoding isn't the reason for this misbehavior! I'm using VideoConverterUltimate now and it works perfect...

Okay, so I used the settings you prefered but still no subtitles. This problem is really difficult to solve... :( I also extracted the A.S.S file from the MKV and "muxed out" these subs via mkvmerge. The output file is still without subtitles when you use A S S files.
So the missing tag on the header does not cause the problem.
Tried 3 hours to get the subtitles shown but couldn't find any solution.

Subtitles shown in preview but not in rendered file
So, I have a MKV file with german subtitles. Extracted the subtitles (Track 3) with MKVExtractGUI2 to a separate A.S.S file. pic.jpg Here you can see the default subtitles in the preview window.
